  • ½ teaspoon white pepper
  • ½ teaspoon sugar
  • 1 tablespoon fresh parsley chopped
  • 1 small carrot sliced (for garnish)
  • ½ teaspoon garlic powder optional
  • Fish stock enough to cover the fish while boiling

    Prepare the Fish:

    • Cut the fish fillets into chunks. In a food processor, pulse the fish until it is finely ground, but not too smooth. You want some texture to the mixture.

    Mix the Ingredients:

    • In a large bowl, combine the ground fish, chopped onion, eggs, matzo meal (or breadcrumbs), fish stock, salt, pepper, sugar, and parsley. Mix everything together until well-combined, but don't overmix to avoid making the fish too dense.

    Form the Fish Patties:

    • Wet your hands to prevent sticking, and form the mixture into oval or round patties, about 2-3 inches in diameter.

    Prepare the Cooking Liquid:

    • In a large pot, bring the fish stock (or water) to a simmer. Add the sliced carrots to the liquid for flavor.

    Cook the Gefilte Fish:

    • Gently place the fish patties into the simmering stock. Cover the pot and let the fish cook for about 45-60 minutes, or until the patties are firm and fully cooked through.

    Cool and Serve:

    • Once the gefilte fish is cooked, remove the pot from the heat and let the fish cool in the stock. For best results, chill the gefilte fish in the fridge for several hours before serving.

    Garnish and Serve:

    • Serve the gefilte fish cold or at room temperature, garnished with fresh parsley, horseradish, and pickled vegetables on the side.
