Prepare the Lettuce: Wash and chop the romaine lettuce into bite-sized pieces. Place in a large mixing bowl.
Rinse the Chickpeas: If using canned chickpeas, rinse and drain them thoroughly to remove excess sodium. Add to the bowl with the lettuce.
Add Cranberries & Nuts: Stir in the dried cranberries and chopped nuts (such as walnuts or almonds).
Slice the Red Onion & Avocado: Thinly slice the red onion and avocado. Add the onion to the salad and set the avocado aside for topping later.
Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Toss & Serve: Pour the dressing over the salad and toss gently to coat. Top with the sliced avocado and serve immediately. Enjoy!
