  • 1 cup chickpeas rinsed and drained (canned or cooked)
  • ½ cup dried cranberries
  • ½ cup chopped nuts such as walnuts, almonds, or pecans
  • ¼ cup red onion thinly sliced
  • 1 avocado sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt and black pepper to taste

  • Prepare the Lettuce: Wash and chop the romaine lettuce into bite-sized pieces. Place in a large mixing bowl.
  • Rinse the Chickpeas: If using canned chickpeas, rinse and drain them thoroughly to remove excess sodium. Add to the bowl with the lettuce.
  • Add Cranberries & Nuts: Stir in the dried cranberries and chopped nuts (such as walnuts or almonds).
  • Slice the Red Onion & Avocado: Thinly slice the red onion and avocado. Add the onion to the salad and set the avocado aside for topping later.
  • Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
