  • 1 cup grated zucchini squeezed to remove excess moisture
  • 1 cup grated carrot
  • 2 cups all-purpose flour
  • 1 cup granulated sugar or coconut sugar for a healthier option
  • ½ cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg optional
  • ½ cup chopped walnuts or pecans optional
  • ½ cup raisins or chocolate chips optional

Instructions for Quick Zucchini Carrot Bread

  • Preheat & Prepare – Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  • Mix Dry Ingredients – In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Combine Wet Ingredients – In another bowl, whisk together eggs, oil, and vanilla extract until well combined.
  • Fold Everything Together – Gradually add the wet ingredients to the dry ingredients. Stir until just combined. Gently fold in the grated zucchini, carrots, nuts, and raisins (if using). Do not overmix.
  • Bake – Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool & Serve – Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
