Preheat & Prepare – Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
Mix Dry Ingredients – In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
Combine Wet Ingredients – In another bowl, whisk together eggs, oil, and vanilla extract until well combined.
Fold Everything Together – Gradually add the wet ingredients to the dry ingredients. Stir until just combined. Gently fold in the grated zucchini, carrots, nuts, and raisins (if using). Do not overmix.
Bake – Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve – Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
